I must give credit because I didn't make any changes this time... though I will still write out the recipe at the bottom. The hubby love Peanut Butter and Jelly, so to make as a dessert was a no brainer. His buddies were over, so I knew they wouldn't go to waste.

I remembered to take a few more pictures this time. Though, forgive me, they are not the greatest.

The first step is to cream butter and sugar, which is most definitely the yummiest thing in the World!!

Then you add the eggs, peanut butter and vanilla till its creamy goodness...

Then you add the flour mixture and mix until well combined (no pic for that, but you get the point)
I lined a 9x13 pan with foil and sprayed the foil with floured baking spray (so much easier than doing it the conventional way). I pressed 2/3 of the batter into the pan... then spread the jam across the top of the batter... I chose grape because it's Johnny's favorite... the remaining batter was dropped onto the jelly in little clumps, and then topped it all off with chopped peanuts... YUMMY!!

Bake at 350 degrees for 45 minutes...

Like I said in the beginning... I think it could have used a but more jelly... but that's ok... trial and error!! The peanuts added a nice salty to the sweetness of the peanut butter "cake"...

I must say, it needs a glass of milk to go with it, but you will not be disappointed if you like peanut butter and jelly!!

RECIPE
2 sticks of butter (soft)
1 1/2 cups of sugar
1 tsp of vanilla
2 eggs
2 cups of creamy peanut butter
1 tsp baking powder
1 1/2 cup of grape jam (ok, you can use whichever flavor you want)
1/2 cup of chopped peanuts

Pre-heat oven to 350 degrees
Line a 9x13 pan with foil or parchment, grease and flour (or use baking spray like me).
Cream butter and sugar together in mixer, add eggs, vanilla and peanut butter, and mix until well combined.
Sift flour and baking powder together in separate bowl then add slowly to creamed mixture.
Spread 2/3 of batter into pan and spread to the edges. Spread jam on top, then drop clumps of batter on top. Sprinkle peanuts on top.

Bake for 45 minutes and golden brown!
Enjoy!! We all did over here!

Again... thank you to http://www.framedcooks.com for the recipe!!! I love your page and wanted to share your yumminess with my friends! (Everyone... enjoy her site... it's got good stuff on it!)
I knew I would eat the entire batch, so I made them for Johnny's guy friends... they are devouring them as I type this... I have to admit... I ate 2 before I even brought the plate into them! haha

They are SUPER easy to make... Ready for this... 3 ingredients and no baking!!! I only got one picture, so it's going to be a short post!!

This picture doesnt do them justice... I guess I will have to make them again to get better pictures ;-)

So here's the recipe...
1 Package of Oreo's (crushed and crumbled, but not ground)
I bag of Large marshmallows
4 Tbsp of Butter

Crush up those Oreos and set aside... In a microwave safe bowl melt the butter and the marshmallows... about 2 minutes, but keep your eye on them, they expand... take out of the microwave and mix together, add cookies, keep mixing until well combined... some mix until all black, I like them chunky like this! Pour into a square pan lined with foil (my advice, grease up the foil a little, I had a hard time with mine and was wishing I greased). Cut into bars and serve! Make sure to enjoy one or two before you share, or you might not get any!!

Enjoy!! and thank you Bakergirl for sharing the recipe! (check out her blog, she has yummy things and takes yummy looking photos!!)
I cant believe she is 2, it feels like yesterday we were anxiously awaiting a call from her mommy and daddy to tell us she was here... Her "Deannie" makes her a cake every year!! This year her mommy decided to do a Candyland theme... we kept the decorations somewhat simple, but the cake itself had a lot going on, and it was all good!!!

I made two of these... and the pretzel sides were to be the middle... but we couldn't just have pretzel middle so I made my special Peanut Butter cream... which is Natural Peanut Butter, confectioners sugar, milk, and in this case... crushed Tagalong Girl Scout cookies... yes, you read that right!!
The pretzel side of the top layer went pretzel down so that the middle of the cake was pretzel, peanut butter, pretzel... then I covered the wonderful creation with Caramel buttercream... The thick caramel is dark and makes the icing beige, so I dyed it pink.
It boasted being easy and quick, and I thought, even better... I never got around to making it that morning, but when I went to my friends house for a little girls night, we needed a quick dessert, and luckily she had all the ingredients.

It didn't go so well... when I say epic fail, I mean, EPIC... it went in the trash!! I don't take dessert defeat well, so I vowed to try it again.

The hubby had the guys over tonight, and after I made them a Crock-pot Lasagna and garlic bread, I took a stab at the fudge again! I made some modifications, and I must say, we have a winner!!
The pan I used was too thin, but maybe not, because it was REALLY sweet... But it only took a few minutes to put together and an hour to chill...and you make it in the MICROWAVE!!! I edited the recipe... so it's mine now! haha... I doubled the cake mix and lessened the butter!! Here you go!

Cake Batter Fudge:
2 Cups of Yellow Cake Mix
1 Cup of Confectioners Sugar
1/2 a stick of butter
1/4 cup of milk
Sprinkles (optional)

Mix the cake mix and sugar in a microwave safe bowl until combined. Put butter in the center and pour milk on top. Put in the microwave for 2 minutes. Remove from microwave and stir until thick and combined. Add Sprinkles, but don't over mix, the color will bleed.
Pour into greased pan, and chill in refrigerator for 1 hour... or more... Take it out, cut in squares and feed to hungry men!! haha... save some for yourself too!

There you have it friends... My version of Cake Batter Fudge!!Jeanniehttp://www.blogger.com/profile/08369230357717590641noreply@blogger.com0tag:blogger.com,1999:blog-7963349146764923185.post-55159024551107780712012-07-22T11:16:00.002-07:002012-07-22T11:16:19.728-07:00Avalanche BarsI am a regular pinner over on Pinterest, as some of you may already know. I have a board called Food Bucket List, and I am doing my best to achieve it all! Though I have pinned so many recipes, it might be an impossible feat... REGARDLESS, I will show what I can accomplish!

I was having some ladies over for a girls night, and decided I needed to try the Avalanche Bars... They are no bake, so I say, even better on a hot summer day!! They are so easy to make, and SOOOO good... IF, you like white chocolate and peanut butter... (in my opinion, how could you not?)

I will include the recipe below, but here are some photos of the steps.

First, you melt a bag of white chocolate chips and then mix in a quarter cup of peanut till its all blended and smooth (and yummy)

Then you add your 3 cups of rice krispies (or if you are me and did it backwards with bowl sizes, you add your mixture to your rice krispies! hehe) and stir... the white chocolate mixture might still be warm, so you have let it sit a little, stirring occasionally so that it doesn't stick totally yet. When it's cool enough you add your mini marshmallows and mini chocolate chips.

Once everything looks good and combined, you pour it all into your greased pan, and pat the mixture down with the back of the spoon... be careful not to press too much, you don't to make your treats too hard.

Sprinkle remaining chocolate chips on top, and set aside to, well, set! and Viola you have Avalanche Bars...
We gladly accepted and went to Poppy's, a local little burger place in Beacon that makes fresh, grass fed beef burgers to order. On the way back to her house she told us that she wanted to make a Peach and Raspberry Galette that she saw a recipe for. Being a baker I couldn't just sit back and watch, so she gladly let me help!

A Galette is a term used in French cuisine for a flat, crusty cake... for our purposes it was a flat fruit pie! We peeled and sliced 4 peaches, both white and regular, added a little less than a 1/2 pint of raspberries, and tossed them gently with sugar and corn starch. We used pre-made pie crust, which I think is just wonderful... it's tasty and convenient. I save the pie crust from scratch for the holidays!! We laid out the pie crust and circled the peaches around the center on top, putting the raspberries in sporadically... We decided to add a little sprinkle of cinnamon to the top. We folded the edges up and around the fruit filling, and with a little egg white wash, basted the sides. Cut some butter along the top and baked at 425 degrees...

Nicole got a little impatient, but I assured her to let it bake at least 40 minutes... It smelled great and when it was all set and ready, we cut into still hot because we couldn't wait to dive in!

It was so super yummy with just the right amount of sweetness! I will definitely make more of these... using all different kinds of fruit! Feel free to attempt the Galette... our recipe is below!

Crust - just use Pillsbury!
Filling:
4-5 peaches peeled and sliced
1/2 pint of raspberries (or less if preferred)
3 Tbsp of Corn Starch
3/4 Cups of Sugar
Gently toss fruit in sugar and starch mixture. Arrange on pie crust in the center, allowing space to fold up crust over edges of the fruit. Sprinkle with cinnamon. Lightly brush egg white wash on crust. Top Fruit with slices of butter. Bake at 425 degrees for 40-50 minutes until golden brown!

I do apologize... but I am back with my summer kick-off staple! BLUEBERRY PIE!!!!

I know its already July... does it count as a summer kick-off? Well it does for me... I was busy getting married and travelling Ireland on honeymoon!!

So I have been pinning amazing recipes on Pinterest, and have vowed to make something once a week... I know this will inevitably turn out to be once every other week, or something like that, but we can try!!!

It was 4th of July, and it wouldn't be 4th of July without my Blueberry Pie... so I ran out, got the BEST ripe blueberries I could find, and I turned out a pie in just an hour! GO ME!

Here is it pre-bake...

I have FINALLY learned from previous disasters, not to overfill the pie... I always have overflow, and it kills my oven (though I was smart this time and put foil down, just in case), but it also makes for a sloppy looking pie...

Not this time!!!

So pretty... the crust browned perfectly, the smell was divine, and pie was just lovely!! I packed it up in my Grandma Bonnie's two pie basket, and headed to the BBQ...

Needless to say everyone enjoyed the pie...

So here they are!!

First up... Katie's Baby Shower Cake... It was a dense chocolate cake with Peanut Butter buttercream... Topped with fondant, and hand-sculpted fondant creatures. The creatures were accented with edible marker. The sides were done with fondant seaweed and starfish... and some bubbles!

Next was Nicole's Bridal Shower... Her colors are Orange and White for her awesome Fall wedding that is just around the corner!!!

The cake was another dense chocolate one, but filled with canolli cream and iced with vanilla buttercream, then topped with fondant. All decorations are fondant as well!

Third was Gracie's First Birthday... she got a special cupcake, but here is her cake for the adults. The cake was peanut butter cake, with peanut butter filling, and iced with marshmallow buttercream (my favorite!). The cupcakes on the cake were cut from sugar sheets, and written on with edible marker.

Let me share with you today's Bridal Shower cake and the cupcakes to go with it. Here's the cake to start. It was a 9 in. Red Velvet cake with cream cheese icing. Topped with white fondant and adorned with purple gum paste ribbon and a purple gum paste flower. Its kind of a cross between a daisy and a lotus... we just wanted to make it full with layers of petals...

The lighting was a little off, but you get the idea... and you can see the layers of petals!

The cupcakes were half vanilla and half chocolate, all with vanilla buttercream. Each cupcake got a flower of their own. Some small and flat, others larger and curled.

The sister of the bride was very pleased... the flower matches the favors that were being given at the shower.

All in all, another great success! Thank you to my future Mother in law, Betty who helped in the flower assembly line!! :-)Jeanniehttp://www.blogger.com/profile/08369230357717590641noreply@blogger.com0tag:blogger.com,1999:blog-7963349146764923185.post-32788915432417559102011-05-09T10:41:00.000-07:002011-05-09T10:41:07.864-07:00Shenanigan's Opening Day - Cinco de MayoI play coed softball for a work team called Shenanigan's. Our colors are Black and Green and our logo is a shamrock!

Last Thursday, on Cinco de Mayo... it was the Shenanigan's opening day... To commemorate the day, and the festivities of Cinco de Mayo, I made Corona and Lime cupcakes. The shamrock on top is not for Cinco de Mayo, but for my Irish Shenanigans!
These were super easy to make, and way yummy. I cheated and took a box of vanilla cake mix... I added 12 ounces of Corona beer to the mix and stirred. Let them bake as usual... For the Lime Cream Cheese Frosting I took an 8oz container of whipped cream cheese, about 4 cups of confectioners sugar and a Yoplait Key Lime Yogurt and mixed until smooth and creamy!!!

I topped with some green sugar crystals and the fondant shamrock, and viola... Corona and Lime cupcakes... a little Irish/Mexican mix never hurt anyone! ;-)

They were sticky, but they went over well at the bar after the game. We sadly lost, but there were a lot of laughs and a that's all that counts!!!Jeanniehttp://www.blogger.com/profile/08369230357717590641noreply@blogger.com0tag:blogger.com,1999:blog-7963349146764923185.post-15247717922814605852011-05-06T05:16:00.000-07:002011-05-06T05:16:34.705-07:00Nicole's 30th Birthday Almond Joy CupcakesMy best friend turned 30 in April... I will turn 30 in June... we are inseparable... I was her maid of honor, she will be my matron of honor next year... whatever Nicole wants, I try to give her cause I love her and I couldn't imagine life without her!!!

For her big birthday bash she told me that she wanted Almond Joy cupcakes, so I went to work...

Vanilla cake (i know what you are thinking, but wait for it) strewn with toasted coconut in the cake. Filled with a rich chocolate ganache... topped with a coconut buttercream and dipped in shaved almonds and more toasted coconut. It sounds like a lot of coconut, but it was subtle enough that it wasn't over powering... People that didn't even like coconut ate them, and even went back for more!! ;-)
I made spring daisy cupcakes for our Easter celebration this year... Light and delicate, just like spring! ;-)

Vanilla cake, vanilla buttercream, and little daisies made out of gum paste by my own two little hands! :-)

Enjoy!
Jeannie, will you make me a Buzz and Woody cake??? Those adorable big brown eyes are impossible to say no to (not that I would have anyway)... So I started studying Woody and Buzz and a cake was made!!

The cake was chocolate, filling with chocolate pudding, iced with chocolate buttercream and covered with blue fondant.

I sculpted both figures out of dyed fondant, and even cut the clouds by hand!

Toy Story 3 and Logan is 3... it all just worked perfectly. His mom is going to post some pictures of him with his cake, so I will post those when I see them! His face was priceless as he looked for me through the crowd, with his eyes all big and awesome, found me and said... THANK YOU JEANNIE! ITS BUZZ!

He is the epitome of why I make these cakes!! :-)Jeanniehttp://www.blogger.com/profile/08369230357717590641noreply@blogger.com2tag:blogger.com,1999:blog-7963349146764923185.post-83347517999070906442011-04-02T11:43:00.000-07:002011-04-02T11:43:37.162-07:00Strawberry Rhubabrb Pie CupsI am a big fan of Strawberry Rhubarb Pie... but my friend Lori is an even bigger fan. At a Tastefully Simple party, I discovered that they make a Strawberry Rhubarb jam... so I had to get her some... at first taste, she was in love, and craving a pie! I had to improvise.

I bought a jar, and made mini pies... I took my mini muffin pie tin out... greased it up, and then rolled tiny balls of pie crust... pressed then into the pan and and up the sides just like a big pie. I took out a little spoon and filled each crust with some jam... took the leftover crust and made little crosses on top, and baked!

Viola... mini Strawberry Rhubarb Pie Cups!

They were a hit, and she was very happy... They got a little messy, but only the ones I filled a little too much! The crust was great though... I love crust! I was going to make then into pie pops, but mini pies was more fun!!

Enjoy!Jeanniehttp://www.blogger.com/profile/08369230357717590641noreply@blogger.com1tag:blogger.com,1999:blog-7963349146764923185.post-7134048610701763172011-03-20T08:29:00.000-07:002011-03-20T08:29:23.782-07:00Spongebob Squarepants Charity CakeI was approached last fall about a fundraiser for KidsPeace in Kingston, NY. I have done fundraisers before, and am always more than willing to donate a gift certificate for a silent auction, or help in ways that I can. The woman that won the bid for the gift certificate has triplet grandkids, and although they each get their own cake (which I love), she wanted to have an additional special cake for them to get excited about. Being that her birthday is the same week, it would be her cake, but she chose a design that the kids would go nuts for... Spongebob Squarepants.

Now, you know me... a kid's themed cake where I get to make figurines... it doesnt get much better for me!

Here he is... Who lives in a pineapple under the see? SPONGE-BOB-SQUARE-PANTS!!!

It was a fun cake to do, and I'm so glad I could help out with the fundraiser. The cake itself was marble, with vanilla pudding and fresh strawberry filling. It was crumb coated with vanilla buttercream and covered with fondant. As always, I sculpted the figures by hand out of dyed fondant.

It's apparently cake season... I have 2 more definites on the way... and 2 other tentatives! :-) Looking forward to sharing them all with you!Jeanniehttp://www.blogger.com/profile/08369230357717590641noreply@blogger.com1tag:blogger.com,1999:blog-7963349146764923185.post-68191610646645863112011-03-06T17:38:00.000-08:002011-03-06T17:38:19.214-08:00Individual Crumb CakesI wanted something different, but something portable and individual. Coffee/Crumb cake came to mind. So I looked up some recipes... had all the ingredients, and decided to make them in the cupcake pan instead of a bread pan. My friends were not disappointed. One even compared them to the Hostess ones she ate as a kid! :-) I love when things work out so yummy!
So here is the Oreo inside the cupcake... I was originally going to do chocolate cake but wanted to make sure you could see the Oreo, so vanilla cake it was. The icing was vanilla buttercream with more Oreo's crushed inside... sooooooo good! ;-)
I've always called them my version of the "Hostess" Cupcake. When I had to make dessert for the Superbowl party, the consensus was to make my Hostess cupcakes... so I decided to make them a little more "authentic". The cake was chocolate, they were filled with vanilla cream and then topped with rich chocolate ganache, twice! I used the vanilla cream to decorate the cupcakes with footballs, Superbowl notes, and the classic Hostess swirls.

And the "Hostess" football...

They went over very well... 2 Dozen went pretty fast, especially when guests claimed their seconds or thirds to bring home with them.
I hadn't done a 3D Dora cake yet, so you know I was excited about this one.

The cake was classic... chocolate cake with chocolate buttercream filling and icing. The cake was covered in purple fondant, and decorated with fondant stars and polka dots. The parameter of the cake was adorned with purple fondant balls and on top, the cake had two hand sculpted figures. Dora and Diego. They sat atop a green fondant patch that was surrounded by lavender flowers. Maya's name was blocked out on top as well.
It was a fun cake to make, and a quick one for me. The more of these children's cakes that I make where I have artistic freedom on design, the faster I bang them out! Another of Johnny's food favorites, and I do live to make him happy!!! :-)

I cant take full credit... I got the recipe from Martha... she is wonderful!!! Stewart of course! Though I did have to adjust a couple things for lack of ingredients... and since it was a "snow day creation", I wasn't running out to the store.

Peanut Butter flavored cake... from scratch... peanut butter buttercream (I do have my own recipe for this, but I can give this one a whirl for variation!)... and grape jelly.

I am trying to behave with my eating, so I made mini cupcakes too that I could try without feeling too guilty... and they were the most perfect morsels... but they didn't have the jelly going into the cake, not enough room... but I will let the pics explain! Let the drooling begin!

I think i'm getting a good start at what will be on the menu in my cupcake shop... whenever that happens! haha... Happy Cupcake Snow Day!Jeanniehttp://www.blogger.com/profile/08369230357717590641noreply@blogger.com0tag:blogger.com,1999:blog-7963349146764923185.post-12389907534657458832011-01-30T16:24:00.000-08:002011-01-30T16:24:39.373-08:00Chocolate Chip Cookie CupcakesThe love of my life has another love, besides me... its Chocolate Chip Cookies... I'm always trying to find ways to make them different and better... adding peanut butter cups... making a huge giant cookie... making them into little peanut butter "cups"... so with all my cupcake ideas lately, I decided, why not bake a chocolate chip cookie INSIDE a cupcake??? and then while i'm at it, make the buttercream, a cookie dough buttercream?!?!?!

Ok!

So I started with cookie dough... and then vanilla cake batter... stuck the cookie dough in the middle of the batter and baked...

Then I made my classic vanilla buttercream, but whipped it for a very long time, making it extremely fluffy and delicate... then I added chunks of cookie dough, and stirred.

Topped with a few mini chocolate chips, and Viola!

The boy was in love... all over again... and I had a new cupcake under my belt... :-)Jeanniehttp://www.blogger.com/profile/08369230357717590641noreply@blogger.com0tag:blogger.com,1999:blog-7963349146764923185.post-49316904943568009782011-01-26T11:56:00.000-08:002011-01-26T11:56:25.050-08:00Caramel Apple Pie CupcakesI keep coming up with cupcake ideas randomly... and luckily with all these snow days I have to take, I have plenty of time to try some of them out. So what did I have in the cabinet... a box of cake mix, a can of seltzer, everything for icing (always), caramel and apples... hmm OK.. Got it!

The Caramel Apple Pie Cupcake

SO first I made the apple filling... I diced up the apples really tiny, added some butter, brown sugar and cinnamon... put it all in a frying pan and sauteed until I felt they were the perfect consistency. Then I made the cake. Very simple.. a box of Spice Cake and a can of seltzer (mix and done... its my favorite way to make cake when I am just trying things out... and tastes so good, why not!) When the cupcakes were cooled, I put a little hole in the middle and filled it with caramel... then I made a caramel and sea salt buttercream and topped the cupcake, leaving a well for the apples... spooned some apples in the center, drizzled with caramel and decided to throw some salted peanuts on top.

Tough to eat because its so top heavy, so we ate the second one with a spoon. They were super sweet, but the salty peanuts and the slight hints of salt in the buttercream set it off, just enough!
I've been pretty busy... not as busy with cakes... but dabbling in cupcakes!! and regular crazy life stuff!!

Sharffenberger was having an Adventure Cupcake contest... so i entered. They gave you a list of "adventure ingredients" to choose from, and when I saw stout beer on the list, I knew EXACTLY what I wanted to make...

An Irish Car Bomb... a half pint of Guinness... a shot of Bailey's Irish Cream and some Jameson's Irish Whiskey on top... you have to work fast or the Whiskey will curdle the Cream... unless you pour it as perfectly as this...

So how do I make this favorite, into a cupcake... EASY!!!

Take chocolate cake mix, add a bottle of Guinness Stout... mix and bake!!! Guinness part DONE. Then take some creamy chocolate and mix in some cream to make it into ganache... then add 2 TBSP's of Jameson's.... mix well!!! let set! Whiskey DONE... then, take your classic whipped cream recipe... make it, and stir in 1-2 TBSP's of Bailey's Irish Cream (depending on preference)... Bailey's DONE... and you have the Chocolate Irish Car Bomb Cupcake...
When I cut the cupcake open, the ganache had seeped into the chocolate guinness cake making it TO DIE FOR!!! and making me pretty tipsy!

Definitely not a cupcake for the kids!!!

More to come!
